Three Pools Pop Up - London
Last weekend, we brought Three Pools to London, Studio Z, aiming to showcase our farm's produce in the heart of the capital.
We curated a five-course tasting menu, each dish featuring ingredients sourced directly from our farm or gathered through foraging and hunting. Alongside the culinary delights, we brought along our Three Pools DJs and infused the evening with our signature Three Pools vibe. The night was an overwhelming success, with all tickets selling out!
Among the culinary highlights was the amuse-bouche, a late addition to the menu inspired by Tom's recent deer hunting expedition in Bedford (as part of a deer management program). The Chinese Water Deer loins were transformed into a venison tartare, blended with Japanese-inspired mayo and soy-marinated quail eggs, offering a traditional tartare experience with an innovative Japanese twist.
Another standout was our deconstructed lasagna, crafted with beef sourced directly from our farm. We slow-cooked our beef brisket to perfection, then hand-rolled fresh pasta sheets to assemble individual mini lasagnas for each guest. The result was a culinary triumph, showcasing the incredible flavour of our farm's beef.
We also featured our succulent pork chops as the centrepiece of our main course, served alongside confit potatoes and wild garlic harvested from the Skirrid mountain. To conclude the evening on a sweet note, Chef Danny Jack crafted a delightful bourbon tart, accompanied by farm-made ice cream infused with last year's hay harvest.
We're already planning to bring this exceptional experience back to London next year, so keep an eye out for updates!
